Caramel Popcorn
Making your caramel popcorn at home is one way to save money. But simply making homemade butter and popcorn and hiding it in the freezer is not enough to guarantee you get the best flavor! While homemade butter and popcorn can be great, the flavor will fade when it freezes!

However, there are a few recipes out there that allow you to keep your snack true to the original, without removing key pieces. In this post, I will show you how to make homemade caramel popcorn and keep it crunchy and spicy.
HOW TO MAKE CARAMEL POPCORN
First, I am going to break down a couple of these recipes into what they are going to take you. I am going to focus on the seasoning, so you can decide if you want a low heat or high heat flavor. It may help if you already made the butter, sugar, corn syrup and flavoring, so that you cannot go too crazy on the flavoring.
The next step is to make sure to cover your popcorn with a layer of sugar. Since popcorn is extremely flammable, keeping it covered prevents it from exploding if you ignite it. We usually just coat our popcorn in sugar, but you can also use chocolate chips, mnm’s or graham crackers to cover it.
When you have your popcorn covered, it is now time to sear it to get the proper caramel flavor. Simply set a cast iron skillet over medium heat and add a small amount of butter. Stir constantly, until the butter has melted, and then add the corn syrup. Stir constantly until the mixture has thickened and is barely a little bit thick.
After yo have added the mixture to the skillet, set the pan right on the heat and stir for about 90 seconds. Turn off the heat and stir salt and pepper. Again, this will help to keep it from burning.
Now that you have finished your caramel, add the sugar and again turn off the heat and stir gently. Continue this process until you have slightly thickened the mixture and infused it with caramel flavor. You can also occasionally stir in another pinch of salt or pepper for more flavor.
In the bottom of the pan you will see what looks like a glaze. Add just a little bit of melted butter. Then add your salt and pepper and the pieces will turn from a glaze to a caramel as you heat through. If you like, you can coat the pieces in melted chocolate or candy melts, But I prefer to let the caramel forms the ultimate sticky caramel shell.
The following is a very easy cinnamon corn kernel pop recipe. It has a ground up cinnamon spice mixture that is an easy way to spice up you corn. If you like brown sugar or maple syrup added to the mixture, feel free to try that. This recipe has cinnamon, brown sugar, vanilla extract and potato starch added for crunch.

Ingredients
- 1/2 cup popcorn kernels
- 2 tbsp oil
- 1/4 cup butter
- 3 tbsp corn syrup
- 1 pinch salt
- 1 pinch black pepper
- 1/4 cup chocolate chips/mnm’s
Directions
STEP 1
In a large, heavy-bottomed pan, heat oil over a low heat.
STEP 2
Add popcorn kernels and wait for 1-2 popcorn kernels pop which might take a few minutes.
STEP 3
Once the kernels pop, cover the pan and give the pan a little shake to distribute the kernels evenly. Continue cooking until the popping sound slows down.
STEP 4
Remove the pan from heat and pour the pop corn in a large bowl and put aside.
STEP 5
In the same pan, melt butter over a medium heat.
STEP 6
Stir constantly, until the butter has melted, and then add the corn syrup. Stir constantly until the mixture has thickened. You can also occasionally stir in another pinch of salt or pepper for more flavor.
STEP 7

Notes
- Don’t cook pop corn on a high heat.
- Don’t make caramel on a very high heat, otherwise caramel will get stiff.
