This vegetable Salad is a recipe for braised quinoa that looks interesting and tastes great. It has all the nutrients and classic flavor of a Basic salad. You can make rice with it to make more vegetarian, or use tofu instead. It’s delicious. But if you cannot find your avocado today, add an extra one to the salad along with the beets or almonds.
- 1/4 cup quinoa
- 1/4 cup pomegranate
- 1/2 cucumber, chopped
- 1 tbsp spinach, chopped
- 1 tomato, chopped
- 1/2 beetroot, chopped
- 1 pinch salt
- 1/4 tsp black pepper
- 1/2 tsp vinegar
Heat water in a pan and add quinoa and boil for 5 minutes till soft. Drain the excess water and set aside to cool.
In a large mixing bowl. add pomegranate seeds, cucumbers, tomatoes. beets and spinach.
Season with salt and black pepper and pour some vinegar and mix till incorporated.
Serve with rice and enjoy!
