Pulao with Cutlets
I have now figured out how to make beef rice and cutlets. You just cook beef with a mixture of peas and rice. I’m tired of these tangy BBQ sauces in the stores, but I love this dish. Beef sounds good. But what if I put a little something in every bite and I am, what else do I have to do?
Here are the instructions. It’s easier to follow than instructions on he package. I have yet to fail it.
Ingredients
For the Yakhni/soup
- 1/2 kg beef, boneless
- 3 cups of water
- 1 onion
- 3 small pieces of ginger
- 3 cloves garlic
- 1 tsp salt
- 1 black cardamom
- 5-6 black peppercorns
- 2-3 cloves
- 1 cinnamon stick
For the Rice
- 2 cups rice
- 1/4 cup oil
- 2 onion, sliced
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 tsp salt
- 1 tsp red chili powder
- 1/2 tsp Shan Masala (Karachi Beef Biryani Masala)
- 1/2 tsp turmeric
- 1/4 tsp black seed
- 1/2 teaspoon cumin seeds
- 2-3 sliced tomatoes
- 1-2 green chilies, Chopped
Directions
For the Yakhni/soup
STEP 1
In a pressure cooker or pan, add meat and water. Heat until just warm over a medium heat.
STEP 2
You can add cardamoms, black peppercorns, cloves, cinnamon, cumin seeds and salt and pressure cook for 15 minutes over a medium heat. ( If you do not have a pressure cooker, you can cook in a pan for good 2 hours till the meat becomes tender).
STEP 3
Remove meat from heat and strain the yakhni/soup and beef stock separately and set aside to cool.
For The Rice
STEP 1
Soak rice in a bowl for half an hour prior to cooking.
STEP 2
In another pan , heat the oil and add the sliced onions and cook till it changes its color to deep brown.
STEP 3
Mix in ginger and garlic paste and cook for 1 minute.
STEP 4
Now, add salt, red chilies,turmeric, Shan Masala, cumin and black seed and cook for a while. Add the sliced tomatoes along with the beef stock and chopped green chilies and cook till the oil separates.
STEP 5
Now, add the cooked meat and saute for 2 to 3 minutes.
STEP 6
Now add beef yakhni/soup and when it starts boiling, add the soaked rice (make sure the rice are completely soaked in soup with an inch more water/yakhni on rice. If yakhni/soup is not enough and soaking rice well, you can add more water to an inch to level the surface) and cook on high heat till the water dries out.
STEP 7
Cover the pan tightly and put on simmer on a very low heat for 15 minutes.
STEP 8
Serve the pulao with potato cutlets raita and enjoy!
