Vegetable Rice|Vegetable Pulao

Vegetable Rice|Vegetable Pulao
Ingredients
- 2 cups rice
- 1/4 cup oil
- 2 green cardamom
- 1 cinnamon stick
- 4 cloves
- 4 black peppercorns
- 1 star anise
- 2 tsp salt
- 1 cup frozen peas and carrots (you can use fresh peas and carrots)
- 1 tbsp fresh herbs
Directions
STEP 1
Wash and soak rice for about 1 hour.
STEP 2
In a pan add oil and heat it for a while. Now, add cardamoms, cinnamons, cloves, black pepper, star anise and cook for a while.
STEP 3
Now add onion and cook till translucent.
STEP 4
Add salt and peas and carrots and sauté for 2 minutes, stirring constantly.
STEP 5
Add rice in the end and cook for 1 minute and add water more than 2 cups that is 1 inch more than you rice layer in the pan. Give it a boil and cook till the water dries out completely on a high heat.
STEP 6
After the water dries out, cover and simmer rice for 10 minutes undisturbed on a very low heat.
STEP 7
Garnish with herbs and serve with raita and kabab or curry!
