Definitely on my wish list!… a Banofee Pie ……oh how I would love to dig into this!

Banofee Pie

Ingredients

  • 1 and 1/2 cups biscuit/Graham cracker crumbs
  • 1/3 cup butter, melted
  • 1/3 cup sugar, granulated
  • For Whip Cream
  • 2 cups, heavy cream
  • 1/4 cup confectioners sugar
  • 1 tsp vanilla
  • For Dulche de leche
  • 1/4 cup butter
  • 1 cup sugar
  • 1 cup condensed milk
  • 1 tsp vanilla

Toppings
chocolate shavings, cocoa powder, cherries, strawberries, chopped nuts. (use toppings of your choice)

Directions

STEP 1
Preheat oven to 350°. Grease a pie pan or any baking with the oil spray and put aside.

STEP 2
Crush the crackers or biscuits with and electric mixer or crush them in a zip-bag with a rolling pin or you can grind them up in a food processor.

STEP 3
Mix in the melted butter and sugar in a medium bowl until well combined. The mixture should be thick and sandy.

STEP 4
Place the mixture in a pie pan and press the mixture down smoothly and tightly and bake for 10 minutes.

STEP 5
Remove from the oven put on a wire rack to cool down for 5 minutes.

STEP 6
Using an offset spatula, lift the crust from the pan and drape onto the large serving bowl or platter.

STEP 7
In the meanwhile, make the whip cream. Whip heavy cream with sugar, milk and vanilla in an electric mixer or hand mixer on a medium-high speed until peaks are formed for 3-4 minutes.

STEP 8

 

Dulce de Leche


Place butter in a non-stick pan along with a sugar on a very low heat, stirring constantly until sugar has been dissolved. Add the condensed milk and vanilla and give it a boil, stirring continuously until golden caramel.

STEP 9
Brush the top of the pie with an oil and pour over the dulce de leche and cool for 1 hour.

STEP 10
Spread the slices of bananas over the dulch de leche and spread the whip cream on top and swirl around and chill in the refrigerator for about 2-4 hours. Garnish with toppings before serving.

Notes

  • You can make crumbs in advance and store them in air tight container and put in a refrigerator up to 3 days and freeze for 1 month.
  • You can make dulche de delche in advance and store in air tight container and put i the refrigerator for 2 weeks.
  • Pie can be made and store for 2 days in advance.
