Made from a blend of #semolina, desiccated coconut and almonds.
This cake is perfectly sweet, with bursts of tartness and notes of nuttiness from the semolina and tahini.

- 1 tsp tahini
- 2 cups semolina
- 1/4 cup sugar
- 1/2 cup coconut, desiccated
- 1 tsp soda bicarbonate
- 1 cup yogurt
- 1/4 cup butter, melted
- 1 tsp vanilla
- 1/4 cup almonds, blanched
For The Syrup
- 1 and 1/2 cups water
- 2 cups sugar
- 1 tsp lemon juice
Preheat oven to 350°. Grease a baking tray with cooking spray or with a silicone brush and spread a layer of tahini sauce and set aside.
In a large mixing bowl, combine semolina, sugar, coconut and soda bicarbonate.
Mix in yogurt and butter in the mixture by using your hands till the mixture is fairly thick.
Add vanilla in the end and combine well till incorporated.
Press down the mixture evenly on square baking tray or round pie pan.
Cut it into square shapes or diamond shapes and put almonds in the middle and bake for 40 minutes till it turns to brown golden.
Remove from oven and set aside to cool.
For the Syrup
In the mean while, make sugar syrup.
Combine water and sugar in a pan and give it a boil over medium to high heat and reduce the heat to low and cover and cook till 10 minutes.
Add lemon juice and mix well while boiling.
Remove from heat and allow to cool.
Pour over the cake when it is ready.
Serve and enjoy!
You can use milk if the mixture is too thick.
