Oatmeal Pancakes

Oatmeal Pancakes

This is a family favorite recipe and a great recipe as well.
My 5-year old daughter often wants me to make pan cakes for her as she loves to eat pan-cakes.
There`s nothing good like fresh pan-cakes.

Ingredients

  • 1 cup milk
  • 1/2 cup rolled oats, old fashioned
  • 1 cup all – purpose flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp soda bicarbonate
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/8 nutmeg
  • 2 tbsp butter (melted)
  • 1 egg
  • 1 banana, mashed
  • 1/4 cup dates, chopped
  • 2 tbsp almonds crushed
  • 1 tsp vanilla

Directions

STEP 1
Whisk together rolled oats and milk in a large mixing bowl and set aside for 10 minutes.

STEP 2
In the mean while, combine all-purpose flour, sugar,baking powder, soda bicarbonate, sea salt, cinnamon and nutmeg in a large mixing bowl.

STEP 3
Melt butter in a pan over a medium heat and add butter, egg, mashed banana, dates, almonds and vanilla in a medium bowl and combine well.

STEP 4
Stir in the flour mixture until well combined.

STEP 5
Heat oil in a skillet over a medium heat and pour and form the batter into small pan cakes.

STEP 6
Cook for 2-3 minutes or until the top is light golden. Flip the pancakes and cook for 2-3 minutes until golden. Repeat cooking the remaining batter.

STEP 7
Remove from heat and let cool .

STEP 8
Drizzle with honey and serve!

Notes

  • You can refrigerate the pancakes for 2-3 days and you can freeze for about 2 months.
