15-minute Quinoa Salad ; Quinoa salad was one of my only exposure to Quinoa, which is why perfecting a Quinoa Salad was very important to me.

Quinoa Salad
If you ask me, Quinoa Salad is the perfect recipe to bring to picnic and BBQ’s, and the fact that it is a cold dish makes throwing it together super easy in just 15-minutes.
And it actually tastes better the longer it sits in the refrigerator. It’s pretty much the perfect food, in my opinion!
Perfect as a side, main dish and an appetizer!
Quinoa Salad
Ingredients
- 1/2 cup quinoa
- 1 and 1/2 cups water
- 1/2 cup chopped tomatoes
- 1/4 cup chopped cucumber
- 2 tsp red onion, chopped
- 2 tbsp spring onions
- 1/4 cup pomegranate
- 1/4 cup white chickpeas, boiled
- 1/2 cup parsley
- 1/4 cup fresh coriander, chopped
- 1/4 cup raisins
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/2 tsp black pepper
Directions
STEP 1
Place quinoa in a small pan, cover with water and bring to boil over high heat. Reduce the heat to low and cook until tender and soft, about 5 minutes. Drain and set aside.
STEP 2
In a large mixing bowl, mix in tomatoes, cucumber, spring onions, red onions, pomegranate, white chick peas, parsley, fresh coriander and raisins.
STEP 3
Add in the olive oil and lemon juice and mix well.
STEP 4
Sprinkle salt and black pepper in the end and stir well.
STEP 5
Stir in the boiled quinoa and cover and place in the refrigerator for an hour.
STEP 6
Toss well and serve!
