In this quaratine, we really exploited our oven and we started making a lot of desserts! This is a classical polish type of dessert called “Zarda”.
Quarantine means more time, and more time means more traditional dishes.

Ingredients
- 1 cup rice
- 1/2 tsp yellow food color
- 1 pinch saffron (optional)
- 1 cup sugar
- 1/2 cup water
- 1 tbsp ghee/oil
- 2 cardamom pods
- 1 cinnamon stick
- 1/4 cup almonds, crushed
Directions
STEP 1
Rinse rice and soak in water for half an hour.
STEP 2
Boil the soaked rice and add yellow color and cook till half done. Drain the rice and keep aside.
STEP 3
In another pan, add sugar water and cook till the sugar dissolves and become consistent.
STEP 4
In a deep pan, add ghee/oil along with cardamom and cinnamon and add the sugar syrup.
STEP 5
Gently, mix in the boiled rice and cook till the sugar syrup dries out.
STEP 6
Cover and put on simmer for 5-10 minutes on a very low heat.
STEP 7
Garnish cooked rice/zarda with almonds oe dried fruit of you choice and serve!
Notes
- The recipe can be double for a large gatherings.
- Add dry fruits of your choice.
