10 Jul Gulab Jaman
Dear diet, things just aren’t looking good for both of us. It’s not me, it’s you. You’re too much work. You’re boring and I can’t stop cheating on you.
For the Gulab Jaman balls
- 1 cup milk powder
- 2 tbsp all-purpose flour
- 1 tbsp semolina
- 1/2 tsp baking powder
- 1 egg
- 1 and 1/2 tbsp ghee/butter (molten)
- 2 cups ghee/oil for frying
For the Sugar syrup
- 1 and 1/4 cup white sugar
- 2 cups water
- 2 cardamom pods
For the Sugar syrup
In a pan, add water and cardamom and stir in sugar and cook on low to medium heat.
Cook till the sugar dissolves completely in water and immdiately and remove from heat and set aside. Don’t overcook it because gulab jaman balls will not be absorbed well in the sugar syrup.
For the Gulab Jaman Balls
In a large mixing bowl, combine milk powder, all-purpose flour, semolina and baking powder.
Now add egg yolk first and mix and then add egg white into the mixture and combine well gently with your hands and do not knead the gulab jaman dough. (If you are a vegetarian, you can add 3-4 tbsp of milk to replace egg).
Now wrap the gulab jaman dough for 10 minutes. Grease your hands with oil and make round balls. Make sure, gulab jaman balls have no cracks in them.
Heat oil in a pan on a low medium heat and add one gulab jaman ball into the oil and if it soon comes on the surface, you can add the remaining gulab jaman into the oil and deep fry and keep n rotating until even brown in color. (If the ball does not come up soon means you have to give a little more heat to the oil to settle the temperature.
Remove from heat and place them on the kitchen towel to remove excess oil.
Add gulab jaman in warm sugar syrup on a very low heat and let them sit for 3 minutes.
Remove from heat and dish them out in a serving bowl and top with your favorite nuts like almonds, pistachios.
Serve hot and enjoy!
