Who wants to eat simple and yummy egg salad? I love all things light and tasty made with simple ingredients!
This Egg Salad is super easy to make with boiled eggs, a touch of mustard and elegant toppings to give extra flavor!
Whether you want to add more plant-based meals to your diet or simply change your salad game, you will find tons of recipes with only few ingredients.
Ingredients
- 4 boiled eggs
- 1/4 cup cabbage cubes
- 1 tbsp mayonnaise
- 1/2 grated carrot
- 1/2 cucumber cubes
- 1 chopped spring onion
- 3 tbsp cream
- 2 tbsp ketchup
Directions
STEP 1 Add the eggs to the pan and boil for 10-12 minutes till they get hard boiled. Remove from heat and set aside to cool. Cut the eggs in half and scoop the egg yolks.
STEP 2 In a large mixing bowl, mix cabbage, mayonnaise,carrot, cucumber, cream, spring onion and ketchup.
STEP 3 Cut the eggs in half and scoop out the egg yolks. Mash the eggs yolks with the mayonnaise mixture.
STEP 4 Fill the egg whites with the mayo mixture and chill in the refrigerator for 20-30 minutes.
STEP 5 Serve with tea.
Notes
- You can substitute mayonnaise to Greek yogurt, hummus or any nut butter.
- You can add chicken or avocados or celery, whatever you like.
