Have you ever tried preparing Ras Malai at home? This soft and delicious dessert might look difficult to make, but this is so easy to make.
Ras malai is a dessert and is eaten in South Asia. People always love to eat this dessert.
My Mom and Aunt used to make it at home whenever guests were coming. There are childhood memories attached to this wonderful bowl. I am sharing my Mom`s recipe along with her secret ingredient in this yummy dessert.
The first step is to make a milk mixture ( 6 cups of water and 1 cup of Nido) and to condense the milk for the Ras Malai.
The second step is the preparation of balls of the dessert. It just takes a few minutes to make the round balls. Once you practiced well, further steps will be easy for you.
I always use Nido milk powder because, I am a big fan of Nido Milk, but you can use any milk powder of your choice in this recipe!
Ingredients
Milk
- 1 cup milk powder (Nido)
- 6 cups water
- 1/2 cup sugar
- 3-4 cardamom
Ras Malai Balls
- 1 cup milk powder (Nido)
- 1 tsp oil/butter
- 1 tbsp semolina
- 1 tsp baking powder
- 1 egg
- 1/4 cup crushed almonds and pistachios
Directions

STEP 1
In a heavy bottom pan, add milk powder in water and mix well. Now, add cardamom in milk.
STEP 2
Turn on the heat from medium to high and give it a boil. Now, reduce the heat to low to medium and stir every 4-5 minutes.
STEP 3
Cook for 15 minutes or till the milk thickens and it reduces to half.
STEP 4
Add sugar and turn on high heat and keep on stirring.
Ras Malai Balls
In the meanwhile, you can prepare your Ras Malai Balls;
Directions
STEP 1
In a large mixing bowl, add Nido, baking powder and semolina.
STEP 2
Mix all of the dry ingredients and make a well.
STEP 3
In a well, add an egg and oil/butter and mix it nicely till it becomes a smooth dough.
STEP 4
Put some oil on your hands and make round balls.
STEP 5
Once the balls are ready, add them in the flavored milk.
STEP 6
Boil for 5 minutes on high heat.
STEP 7
Now, turn the heat to low and cook on a low heat for 8 minutes and do not cover.
STEP 8
Pour in a serving bowl gently when cooled down, and sprinkle the almonds, pistachios and cashews over the Ras Malai.
STEP 9
Garnish the Ras Malai with almonds and pistachios and put in a refrigerator for at least 40 minutes.
STEP 10
Now, the awesome treat is ready to be served.
Notes
- There are 2 cups of Nido powder is used for making Ras Malai. ( 1 cup is for the milk mixture and the other cup is used for the preparation of balls).
- Do not cover the pan when the ras malai is ready.
- If your Ras Malai balls burst in the milk then you can fix it as;
- In a pan add 2Tbsp ghee and melt it on a low heat.
- Add the crushed vermicelli (half packet) and fry it on a very low heat till it changes its color from brown to golden.
- Add 2 cups of fresh milk and cook till it becomes thick.
- Now add this milk into the Ras Malai where its balls were messed up.
- Now this is another yum dessert is ready after you fix it.
