30 Jun French Fries
French Fries are one of everyone’s all-time favorites. My kids love french fries more than the store bought fries. Plus, this is a healthier option for them.
To make proper fries, make sure that the oil is at the proper temperature for deep frying and it should not be over-heating.
These are easy to make and ahead of time and fry or bake in the oven for a quick snack or side dish idea!
- 4 large russet potatoes
- 1 cup ice cold water
- 1 cup oil for frying
- 2 tbsp cornflour
- 1/4 cup all-purpose flour
- 1/2 tsp baking powder
- 1 tsp sea salt
- 1/2 tsp chat masala
- 1/2 tsp black pepper
- 2 tbsp chili sauce
- 1 tsp fresh rosemary
Scrub the potatoes under cold running water. Peel and cut the potatoes lengthwise using a sharp knife and place them in a bowl of ice cold water for 30 minutes.
Remove from water and pat them dry with the paper kitchen towel.
Heat oil in a heavy pan on medium heat. In a medium bowl, sift through the cornflour, all-purpose flour and baking powder and cmbine well.
Now add sea salt, chat masala and black pepper and combine well.
Stir in chili sauce and enough water so that the mixture can be drizzled from a spoon.
Dip potatoes into the batter one at a time and place in the hot oil so they are not touching at first and clump together. If oil overflows, pull a few potatoes out quickly until the oil subsides.
Fry the potatoes until golden brown for 4-5 minutes without disturbing them and cook till they become crispy. Remove them and place them on the paper towels to drain off excess oil. Fry the remaining batch in the same way until they are golden and crisp.
Top them with fresh minced rosemary and serve with a sauce of your choice and enjoy!
- Use ice cold water as it helps to make fries a lot crispier and can be soaked for 2 hours or overnight.
