This is the Pan Roast Chicken Recipe you will make over and over again!
When we roast chicken, we don’t do it with only a sprinkle of salt and pepper ! We do it flavor!

Ingredients

  • 1 whole chicken
  • 1/4 cup yogurt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1/2 tsp crushed red chilies
  • 1/2 tsp black pepper
  • 1 tbsp mint chutney
  • 2 tsp salt
  • 1 tsp Shan Chicken Tikka Masala (optional)
  • 1 tbsp butter

Directions

Step 1
Place the whole chicken on a cutting board and pat the chicken dry with paper towels.

STEP 2
Using a sharp knife, slice the chicken through loose area of skin connecting to leg and breast with chicken breast facing up. Repeat the same on the other side. Make some other small cuts on the chicken so you can get a well cooked chicken.

STEP 3
In a large mixing bowl, add yogurt, olive oil, lemon juice, ginger and garlic paste, red chilies, black pepper, salt and Shan Chicken Tikka Masala and mix well.

STEP 4
Place chicken in the bowl and brush every surface of chicken with yogurt mix including backbone, inside cavity, under wings. and marinate for 30 minutes in the refrigerator.

STEP 5
Working quickly, melt butter swirling it around a large pan on a medium heat and transfer chicken breast side up to a pan.

STEP 6
Using a long-handled spoon, repeatedly spoon up the foam of the butter and pour it back on the chicken. Thew butter will finish foaming and starts continuing brown. Stop basting before the butter starts starts smoking.

STEP 7
Let chicken rest in a pan for 15 minutes on a low to medium heat as it will help the juices in the chicken to settle.

STEP 8
Roast chicken until nicely brown and cooked through. To check, poke a knife and pierce the meat. If the juice runs clear, the chicken is done. If its Pink in color, it needs a little more time to cook. Continue to roast until juice runs clear.

STEP 9
Remove pan from the oven and transfer chicken on a platter and pour all the pan juice over the chicken and serve with a simple green salad and enjoy!
