Spiced Tea/Kashmiri Tea
Green Tea/Kashmiri Tea/Pink Tea/Noon Chai

Servings 4-6
Ingredients
- 10 cardamom pods
- 3 tbsp. Green tea leaves/black tea
- 4 pcs Star Anise
- 3 tbsp Fennel seeds
- 1 stick Cinnamon
- 6 cups Water
- 6 cups Ice cold water
- 1/2 tsp Baking soda
- 3 cups Milk
- 1 pint cream (optional)
- 1 pinch Salt
- 4 tbsp Sugar
Directions
STEP 1
In a pan, add green tea leaves, fennel seeds, star anise, cardamom and cinnamon in water and give it a boil.
STEP 2
Keep on boiling till half of tea is left in a pan.
STEP 3
Pour ice cold water and add soda bicarbonate and beat well and cook on medium heat till 6 cups water is left. Keep stirring the mixture with a laddle until it changes its color to lovely pink.
STEP 4
Turn off the heat and add cream if you want a better taste.
STEP 5
Boil milk and add sugar and salt and cook well for 5 minutes.
STEP 6
Bring the tea mix back to boil and simmer for 2-3 minutes on a low heat and add the boiled milk and cook for 3 more minutes.
STEP 7
Green tea is ready to be served. Strain the tea into cups and add sliced almonds and pistachios and serve with your favorite snacks.
Notes
- To make 1 cup of tea, take 1/3 cup of tea and give it a boil and add 2/3 cup of milk and cook for 3 minutes and serve with your favorite toppings.
- You can store this tea without adding milk in air tight container and place in the refrigerator for about 5-6 days
- You can boil milk and add this tea and drink whenever you want.
