Sponge Cake
Ingredients
- 4 eggs
- 1 cup Icing sugar
- 1 tsp vanilla essence
- 1 cup all-purpose flour
- 1 tsp baking powder
- For the Icing
- 2 tbsp whip cream
- 3 tbsp icing sugar
How to Make a sponge cake
Directions
Step 1
Take eggs and separate the egg whites and yolks in different bowls. In an electric mixer, beat the egg whites for 1 minute on high speed. With mixer on, gradually add egg yolks and continue beating for 2 more until thick and fluffy.
STEP 2
Whisk together icing sugar gradually in thirds while continuing to beat till the sugar just combined well with the eggs. Make sure the eggs and sugar mixture are properly whipped before continuing with the next steps for the successful rise of the cake.
STEP 3
Add 1 teaspoon of vanilla extract and stir softly.
STEP 4
In another bowl, mix together flour and baking powder. Sift this mixture into fluffy egg mixture 1/3rd at a time. Fold with a spatula with each addition until incorporated. Stop mixing when no streaks of flour remain. Do not over mix the batter.
STEP 5
Pre heat oven to 350 F with the rack in the middle. Line the cake pan with a foil and spray or brush with cooking oil and then dust it with flour. Now pour the batter in the cake pan and put in the middle of the oven to bake for 20-25 minutes.
STEP 6
after 20 minutes, insert a tooth pick or knife in a cake to check if its ready. f it comes out clean, the cake is ready.
STEP 7
Remove the cake from the pan after 10 minutes by scraping the edges of a cake and transfer it to a wire rack. Allow to cool completely at a room temperature.
STEP 8
For the best results, leave the cake on the rack for 6-8 hours before using.
STEP 9 ICING
In a mixer, beat whip cream and sugar until thick and fluffy and spread on the top of a cake and put it in the refrigerator for about 2-3 hours and serve!
