Mocca Cream

Ingredients

  • 4 eggs
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1 cup milk
  • 1 cup whip cream
  • 2 tbsp sugar
  • 1/2 cup instant coffee
  • 2 tbsp sugar
  • 2 eggs
  • 1/2 cup butter (softened)
  • 1 tsp vanilla
  • 1 tbsp lime juice

 

How to make Mocca Cream

STEP 1


Whisk 4 egg whites in a bowl for 2 minutes and beat in the sugar slowly.

STEP 2


Now, add all-purpose flour and baking powder in the egg white mixture along with egg yolks and beat with a mixer at low speed until smooth.

STEP 3


Combine milk, cream and 2 tbsp sugar and whisk them altogether.

STEP 4


Add instant coffee in hot water and stir till the coffee dissolves in water and pour in the above mixture and mix well.


STEP 5


In another bowl, add butter and add 2 eggs and whip for about 4 minutes. beat in vanilla and lime juice until it gets creamy texture.


Step 6


Combine the butter mixture in the cream mixture and start blending at low speed and increase to medium high. Continue blending until the cream increases by nearly double and put in the refrigerator for 15 minutes.


STEP 7


Pipe mocca cream on the first layer of cake and spread over he top of cake. Chill until ready to serve.
