Almond Caramel

Ingredients

  • 2 cups almonds
  • 1cup sugar
  • 3 eggs
  • 2 cups milk
  • 1 tbsp all-purpose flour
  • 1 tbsp gelatin
  • 1/4 cup cream

Directions

STEP 1

Soak the almonds overnight or for 2-3 hours in warm water.


STEP 2

Now peel the almonds and add 1 tablespoon sugar. Place the mixture in a pan and heat for a little while on medium heat and grind.

STEP 3
Take out egg yolks and add the following

  • milk
  • all purpose flour
  • 3 tablespoon sugar

STEP 4

Cook the mixture by stirring continuously and put aside. Once cooled, cook it again to make it thick.

STEP 5
Add the remaining sugar in egg whites and beat. In another pan boil the water and add gelatin and mix. Add the mixture in the egg whites.

STEP 6
Mix egg whites with the yolks mixture.

STEP 7
Add whip cream on top. Put this custard in the refrigerator for 2 hours.

STEP 8
Sprinkle the crushed almonds/sugar on top and serve.
