Mixed fruit cake
SIFT 140g all purpose flour with 1/2 teaspoon baking soda, 1 teaspoon baking powder.
Cream 60ml margarine and 200g condensed milk.
Stir in 1 teaspoon strawberry essence.
Add the flour mixture and 100 ml baking soda water(plain).
Mix and bake at 170c for 30-35 minutes.
Slice the cake into 2 parts
Combine sugar syrup and any fruit essence in a bowl to make soaking syrup or use any fruit juice to soak the cake.
Soak the bottom layer with soaking syrup or fruit juice.
Spread 2 cups whip cream on it.
Spread strawberry and mango pieces on top and cover with the top layer of the cake.
Spread the other 1 cup whip cream on the cake and decorate with the fruits and chill in the refrigerator.
