marinate 1 kg mutton with 1 tablespoon garlic paste for 1 hour.
in 1/4 cup oil, add the marinated mutton and cook till it changes its color and water dries up.
Add ginger and cook for 11 minute.
Add 1 teaspoon salt and 1 onion paste and 4 green chilies paste in the mutton and cover and cook for 5 minutes on a medium heat and stir gradually.
Add 1 teaspoon red chilies and cook.
Dont cook onions too much.
Add turmeric and cook
Add 4 chopped tomatoes and 1/2 cup water and cover and cook for 8-10 minutes.
When the mutton is tender enough and oil comes up.
You can pressure cook it for 5 minutes too.
Add 1/4 cup yogurt and 1/4 cup water and cover and cook for 15 minutes.( first 3 minutes cook on high heat and 10-12 minutes on low heat) and stir gradually.
Add dry coriander powder, green fresh coriander and chopped mint . and cover and cook for 3 more minutes and dish out.
