Add 1/2 kg mutton, 1 tablespoon ginger and garlic paste, water, slat, onion paste and cook in a pressure cooker for 10-15 minutes.
Blend fresh coriander, ginger, garlic, onions, 4-5 green chilies with water.
Blend yogurt and home made cream(malai) with milk and add in the above green sauce
Add oil in the mutton and cook .
Make it cool and add in the yogurt sauce and add 2 tablespoon chat masala shan, homemade garam masala, 1/2 teaspoon qasoori methi powder and 1 teaspoon black and white pepper and 1/4 cup butter/ghee and 1 tablespoon vinegar/lemon and salt and marinate for 1 hour.
In oil, fry the marinated mutton well till it changes its color
Cook it for 4 minutes.
Add oil in another pan and heat and add cloves, black peppercorns, and add the remaining yogurt mixture and cook for 5-10 minutes on a full heat by covering it.
When i t leaves the oil after 10-12 minutes, add the cooked mutton pieces and cook for a while
Burn the coal and put a foil/roti and put hot coal and cardamom and sprinkle oil and cover for 2 mins to give a smoky effect.
Now, add 1/2 cup boiled water and coriander, and garam masala and cook for a while.
Its ready to serve now.
