Ingredients

1/4 cup boiled cabbage
2 tablespoon mayonnaise
1/4 teaspoon salt
1/2 teaspoon sugar
1/2 cup vinegar
1/2 teaspoon black pepper
1/4 cup yogurt
1 potato (boiled)
1/4 cup peas (boiled)
1/2 medium cubed capsicum (boiled)
1/2 carrot (boiled)
1/4 cucumber (cubed)
5 slices of pineapple
2 eggs (boiled)
1/4 kg chicken
1 tablespoon oil

Thousand Island Sauce
1/4 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon black pepper
2 tablespoon vinegar
3/4 cup mayonnaise
2 teaspoon ketchup

Directions for a Russian salad
Soak the boiled cabbage in a vinegar for 10-15 minutes.
In a mixing bowl, add mayonnaise, salt, sugar, vinegar, black pepper and yogurt and mix well.
In another bowl, add salt, sugar, black pepper, vinegar, mayonnaise and ketchup and mix very well.
Bring a large pot of water to a boil and add soaked cabbage, potatoes, peas, and carrot. Cook until potatoes are done for almost 20-25 minutes. Drain and slightly cool the mixture.Chop potatoes and carrots.
Bring eggs to a boil for 10 minutes. Put them aside to cool. Peel and chop the eggs.
Pressure cook the chicken to give one whistle and simmer on low heat for 1-2 minutes. Remove from the heat.
Extract the meat from the bones and cut into small pieces. Put in a bowl and spray 1 tablespoon of vinegar and oil on it. keep aside for 10 minutes.
Squeeze pineapple slices well and chop them finely.
Add shredded chicken, pineapple, boiled vegetables, cucumber, capsicum and chopped eggs to the mayonnaise mixture and mix well.
Add Thousand Island sauce on top and put together.
Taste and add more seasoning if required. Keep in a refrigerator till serving.
Add a little milk before serving if it seems too thick.
