06 Nov Chicken Fried Rice
1/2 cup chicken boneless
2 tsp soya sauce
1 tsp salt
1 tsp black pepper
1 tsp cornflour
1 cup rice
1/2 tsp Vinegar
1/4 tsp yellow food color
1/4 cup peas
1/2 cup cabbage ( julienne cut)
1 carrot ( grated)
1 capsicum ( julienne cut)
2-3 spring onions
Marinate chicken with soya sauce, salt, black pepper and cornflour for about an hour and then fry.
Boil the soaked rice with vinegar.
In eggs, add salt and yellow food color.
Boil peas and cabbage in a pan and put aside.
In oil, scramble down the eggs.
Add boiled cabbage and peas, carrots, capsicum, spring onion and mix well.
Add salt, black pepper and soya sauce and cook for 1 minute.
Now add the fried chicken in the mixture .
Now mix in the boiled rice in the fried chicken and put on simmer for 10-15 minutes and serve hot.
