Made my first ever Harees … and it is super healthy…Lots of protein, good amount of fats, low carbs..
Traditional, delicious recipe with spinach, a ketogenic option, perfect for upcoming autumn…
Time is coming for warming and comforting food. This dish is the ultimate comfort food and TOTALLY Healthy!

Harees

Ingredients

For Meat

  • 1/2 kg beef/mutton, boneless
  • 1/2 tsp cumin, roasted and crushed
  • 1 tsp salt
  • 1 tbsp black pepper
  • 3 tbsp green chilies, paste
  • 2 tbsp ginger and garlic paste
  • 6 cups water

For Curry

  • 1 cup whole wheat grains
  • 1/2 cup rice
  • 1/2 cup yellow lentils
  • 8 cups water

For Kabab

  • 1/2 kg mince meat
  • 3 tbsp green chili paste
  • 2 tbsp ginger and garlic paste
  • 1 tsp salt
  • 4 tbsp gram flour/besan
  • 1/2 cup oil

For Tarka

  • 3/4 cup ghee
  • 1 bunch spinach
  • 3-4 green chilies

Serves: 8-10

Directions

For Meat

STEP 1
Add beef/mutton in a pressure cooker along with water over a high heat.

STEP 2
Stir in cumin, salt, ginger and garlic paste and give it a boil.

STEP 3
Reduce the heat to low and cover and pressure cook for 30 minutes till tender.

STEP 4
Mash it with a spatula or fork and set aside.

For Curry

STEP 1
Wash and soak wheat, lentils and rice in separate bowls overnight.

STEP 2
Add whole wheat, rice and lentils in a pressure cooker along with water over a high heat and give it a boil.

STEP 3
Reduce the heat to low and cover and pressure cook for 45 minutes.

STEP 4
Mash it with a spatula or fork and set aside.

For Kabab

STEP 1
In a mixing bowl, add mince meat, green chili paste, ginger and garlic paste and combine well.

STEP 2
Sprinkle salt and gram flour/besan and combine well till incorporated and make little long seekh shape kebabs with the help of a spoon or by rolling in your hands.

STEP 3
Heat oil in a frying pan and stir fry the kabab.

STEP 4
Cook all of the sides well and remove from heat and place in a kitchen towel to remove excess oil and set aside.

For Tarka

STEP 1
Heat ghee in a pan over a medium heat.

STEP 2
Rinse the spinach and chop and boil in a pan for 10 minutes

STEP 3
Remove from pan and pour cold tap water to make it cool and place in an electric blender/mixer.

STEP 4
Add chopped green chilies and make a smooth paste.

STEP 5
Add the spinach paste in the ghee and cook till well incorporated and well cooked.

STEP 6
Add the tarka in the meat and lentil mixture and combine well.

STEP 7
Remove from heat and garnish with kabab and serve with rice/roti/flat bread/nan!
