Who else is a pancakes fan here?
I just love how many nutrients you can pack into them and they are so easy to make! ⠀
Details: wholemeal or wholegrain flour, eggs, skimmed milk, low-fat yogurt, honey, berries.⠀
Pancakes don’t have to be boring. While they were just a thing of the past, now they’re being put on the menu again, and why not?
While we may have chickened out of the frying pan a long time ago, it’s time to make an adventure with a pancake pan.
This season, all you need is a pancake pan, a lighter cast iron pan, and some flour and some water. I like one quart cast iron pan and make mine brown because I think it looks prettier when brown. Simply start with an empty iron pan and dust with flour.
- 1 cup wholemeal flour/almond flour
- 2 tbsp brown sugar
- 1 tsp baking powder
- 1/4 cup low fat yogurt
- 3/4 cup skimmed milk
- 1 egg
- 1/4 cup butter, melted
- 1 tsp vanilla
- 1 banana, mashed
- 1/4 cup blueberries, strawberries (of your choice)
- 1 tbsp dark chocolate chips
- 1/4 cup chopped nuts.
In a large mixing bow, mix flour, sugar, baking powder and set aside
whisk together low fat yogurt, skimmed milk, egg, melted butter and vanilla in a electric mixer until well incorporated
Add banana and combine well.
Mix in flour mixture gradually to avoid lumps and set aside.
Heat a little chunk of butter in a pan and add 1 tbsp of pancake batter and spread around in a circle shape.
Cook one side until light brown and flip the side and cook in the same way. (you can make the mini pancakes in the same way).
Remove from heat and repeat the same process with the remaining batter.
Top the pancakes with blueberries, strawberries, dark chocolate chips, chopped nuts.
Drizzle some honey/maple syrup on top.
Serve and enjoy!
