Peanut butter cookies


Here we have my staple cookie dough mixed with dark chocolate chips and crunchy peanut butter baked until soft and gooey but still with that classic cracked tip.

Pop your apron on and lets get baking!

Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp soda bicarbonate
  • 1/4 tsp salt
  • 1 cup unsalted butter
  • 1/2 cup crunchy peanut butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs (1 egg+1 egg yolk only)
  • 1 tsp vanilla
  • 1/2 cup dark chocolate chips
  • 1/4 cup roasted peanuts

Directions

STEP 1
Preheat oven to 350 and grease a baking tray or muffin cups with a cooking spray or oil.

STEP 2
In a large bowl, sift together all-purpose flour, baking soda and salt and put aside.

STEP 3
In another bowl, beat together peanut butter, butter, brown sugar, white sugar, eggs and vanilla by using electric mixer.

STEP 4
Add in the all-purpose flour mixture into the peanut batter and combine well.

STEP 5
Mix in peanuts and chocolate chips and put in the refrigerator for 30 minutes.

STEP 6
Scoop out the dough ball and roll out into 2 inch balls. Drop into partially greased mini muffin cups or in a baking tray and bake for 12 minutes until golden brown.

STEP 7
Turn off heat and remove from cups, Allow peanut butter cookies to cool for 5 minutes.

STEP 8
Store in air tight container and enjoy!

Notes


You can bake the full recipe on a single tray if you would like.
