Chicken Fajita
Fajitas are wonderfully delicious and versatile. Fajitas are the best served on homemade tortillas. For the side dishes try tomato salsa, bean salad and black beans with bell peppers.
Ingredients
- 1 chicken breast, boneless
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/4 tsp cumin seeds
- 1 pinch black seed
- 1 pinch oregano
- 2 tbsp oil
- 1 onion. sliced (thinly)
- 1 capsicum, sliced
- 1 tomato, sliced
- 2 tbsp grated cheese
Directions
STEP 1
In a large mixing bowl, combine salt, black pepper, paprika, cumin seeds, black seeds and oregano.
STEP 2
Cut chicken breast in half and coat with the spices and pat the slices gently.
STEP 3
In a skillet, heat the oil add place the chicken breast and brown both sides, 5 minutes on each side on medium heat.
STEP 4
Remove from heat and transfer chicken to a plate and let rest.
STEP 5
In the same skillet, heat the remaining oil and add sliced onions, capsicum and tomatoes and saute for 2-3 minutes on a medium heat, stirring occasionally, until soft.
STEP 6
Stir in the cheese and cook, stirring frequently, until the cheese has melted.
STEP 7
In the meanwhile, slice chicken breasts into strips and add them along with chicken breast juices to the pan and combine well.
STEP 8
Serve while still warm with rice or tortillas (or your desired toppings).
