It is a style of cooking that is popular in some towns of Pakistan for centuries.


Let me introduce a cooked traditional dish with unique taste called ”Lahori Chanay”.

Ingredients

For The Chickpeas

  • 1 cup chick peas
  • 4 cups water
  • 1/4 tsp soada bicarbonate (baking soda)
  • 1/2 tsp salt

For The Masala

  • 2 onions, sliced
  • 3 green chilies, chopped
  • 1 tbsp ginger, chopped
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tbsp fresh coriander, chopped
  • 1 inch fresh ginger

Directions


STEP 1
Soak the chickpeas in warm water along with soda bicarbonate and salt overnight. They should thicken considerably and become less watery as the day progresses.

STEP 2
Cook the soaked chick peas in a pressure cooker for 15 minutes and strain the chickpeas and preserve the chickpeas water. The chickpeas shoul be cooked well and softened enough.

STEP 3
Remove from the heat and let it cool down.

For the Masala


STEP 1
In another pan, heat sliced onions in oil and cook till translucent and lightly browned.

STEP 2
Add the onions in an electric mixer and whizz until smooth.

STEP 3
In the same pan, add green chilies and ginger and cook for 1 minute.

STEP 4
Now, add the chopped onion along with salt, turmeric, red chilies, coriander powder and a splash of chickpeas water and cook till it leaves the oil for about 5 minutes over low to medium heat.

STEP 5
Pour the chick peas and all their liquid in the pan and cook over medium heat for 15 minutes.

STEP 6

Remove from heat and dish out and garnish with fresh coriander and ginger.

STEP 7
Serve hot with roti/flat bread/nan/poori or boiled rice.
