Spinach Potatoes/Aloo Palak

Spinach Potatoes/Aloo Palak

Ingredients

  • 4 cups spinach, chopped (add more if you like)
  • 1/4 cup oil
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 1 chopped onion
  • 1 tablespoon ginger and garlic paste
  • 1/4 teaspoon turmeric
  • 3/4 teaspoon chili powder
  • 1 tsp salt
  • 1 teaspoon coriander powder
  • 2-3 potatoes, cubes

Directions


STEP 1
Cut the spinach sticks and wash them well and drain the leaves. Put the spinach in a pan with water and boil for 4-5 minutes. Now, drain the water and chop or blend the spinach after it cooled down.

STEP 2
Heat oil in pan and add cumin seeds, cinnamon stick and half chopped onion and cook well on a medium heat.

STEP 3
Add salt and saute and then add ginger and garlic and cook .

STEP 4
Now, add the blended spinach and cook well.

STEP 5
Cook the spinach and add turmeric, chili powder and salt. Add a little water and cook for 4-5 minutes.

STEP 6
You can taste the salt and add more if required.

STEP 7
In a separate pan, add oil and fry the cube potatoes well for almost 5 minutes till they become done.

STEP 8
Mix in the spinach and cook more if required and serve.
