High Fiber Brownies


Why would I want to eat a healthy brownie? These High Fiber Brownies are healthy brownies, yet low sugar, high fiber and vegan!


Why do you need to buy expensive and processed products when you can make healthier versions at home?


This is a treat you can feel good about eating!

Ingredients

  • 1 and 1/2 cups whole-wheat flour
  • 1/2 cup old fashioned oats
  • 2 tbsp natural cocoa powder
  • 1/4 tsp natural stevia
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 and 1/2 cups black beans (cooked and dried beans)
  • 6-8 dates
  • 6-8 prunes
  • 1/4 cup natural melted butter
  • 2 tbsp natural honey/maple syrup(sweetener of your choice)
  • 1 egg
  • 1/2 tsp natural vanilla extract
  • 1/4 cup semi-sweet chocolate chips

Directions

STEP 1
Preheat oven to 350F. Grease a baking pan with parchment paper and set aside.

STEP 2
In a large mixing bowl, sift in whole wheat-flour, oats, cooca powder, stevia, baking powder and salt and set aside.

STEP 3
Using electric mixer, combine black beans, prunes and dates and break them down by adding a little water.

STEP 4
Add butter and honey/maple syrup and pulse until smooth. Now, add egg and vanilla in the mixture and beat until lighter in color.

STEP 5
Process the flour mix in the processor and incorporate well.

STEP 6
When mixture is even, fold in the chocolate chips and scoop into the prepared baking pan and bake for 18-20 minutes until the skewer comes out clean.

STEP 7
Remove from the oven and allow to cool before slicing. If they still look a little bit uncooked, you can put them in the refrigerator overnight and they will firm up!

Notes

  • You can store for more than a week in air tight container.
  • You can add walnuts or almonds to replace chocolate chips.
