Ingredients
- 1 cup ground almond flour
- 1 cup ground flax seed meal
- 1/4 cup oats
- 1/4 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp soda bicarbonate
- 1/4 tsp rock salt/sea salt
- 3 eggs
- 1 ripe banana
- 3 tbsp honey
- 1/4 cup melted butter
- 1/2 tsp vanilla
Directions
STEP 1
Pre heat oven to 350 F and spray baking cups with oil.
STEP 2
In a large mixing bowl, combine well almond flour, flax seed meal and oats.
STEP 3
Mix in the cinnamon, baking powder and sea salt and set aside.
STEP 4
Using electric mixer, beat eggs, banana, honey and butter and mix in the flour mixture and beat until batter is thick and smooth.
STEP 5
Pour the batter in the greased baking cups evennly and bake them for 20-25 minutes until they are light golden brown and then insert a tooth pick or knife in the muffin and take out, if it comes out clean means that your Almond Muffins are ready for your breakfast.
Notes
- You can add your favorite toppings for your muffins like almonds, walnuts and blueberries.
- You can store them in an air tight container in a refrigerator for 1 week.
