Luckhnowi Mutton pulao
Marinate the 1 kg mutton with salt, red chilies, cumin , coriander and garam masala for 30 mins.
Fry the sliced onionm till it turns to brown and chop it well.
heat oil and add fried onion and add ginger and garlic paste and add chopped green chilies, yogurt and cook for 2 minutes.
add the marinated mutton and cook for 10 mins.
add 1 cup water and pressure cook for 15 minutes.
HEAT OIL AND ADD CLOVES, BLACK CARDAMOM, CINNAMON STICK, Bay leaf and black peppercorns.
Add cashews, soaked raisins and soaked rice and fry for 2 mins.
Now add mutton gravy and mix well.
ad 2 cups of water and cook for 20 minutes on a low heat.
when the rice gets cooked, add saffron with milk and serve with raita.
