Curried Vegetables in a Potato Boat

Ingredients

4          potatoes

1          chopped onion

1          tin tomatoes

Vegetables

1          tin white beans

 

Directions

Boil potatoes for 5 minutes.

Heat and fry chopped onion.

Add a tin of tomatoes and simmer uncovered for 5 minutes.

Add vegetables and a tin of white beans and simmer for another 5 minutes.

Scoop potato out so it can hold enough filling.

Peel and cut the removed tomato into cubes and add to the curry.

Spoon curry into the hole of each potato and serve.
